3 nutrient-packed breakfast ideas for busy mornings

  • Emily Smith

With missing school books, a car that’s frozen solid with ice and PE kits that have disappeared overnight, even the most organised parent can find mornings a challenge.

And with little time to think about eating anything yourself, you’ll still want to make sure that you give your children a good start to the day with some nutritionally balanced breakfasts that don’t take hours to create.

That's why we've compiled a few of our favourite nutrient-packed breakfast ideas for busy mornings that will help free up precious time to help deal with those common morning dramas.

Superfood breakfast bars

For those that normally end up sweeping our toast crumbs from the car every morning, these superfood breakfast bars are great for a meal on the move! Better still, they can be made the night before and left to set in the fridge overnight, so it's a case of ‘grab and go'.

To make them, simply combine oats, seeds, nuts and blueberries (or dried fruit if you prefer) with a few tablespoons of natural honey. Give the ingredients a good mix before placing it in a one-inch high baking pan, press down and leave to set overnight. Then, just cut into bars and go!

Overnight oat pots

Super cheap and filling, the slow release carbs in these overnight oat pots will keep them going until lunchtime. You can get the kids involved with this breakfast idea by asking them to select a few of their favourite fruits which they can add to the top of the pot after adding milk and oats.

The oats will absorb the liquid overnight making them wonderfully soft and ready to eat, so place in the fridge overnight and give the pots a quick stir for a colourful and energy dense start to the day.

Banana and chocolate balls

If you're trying to steer clear of sugary cereals, this recipe can help satisfy any sweet tooth with natural ingredients. Grab a few bananas that are overripe and starting to soften and combine with steel cut oats in a bowl. You'll have to mash the bananas until they soften as you add the oats, so use a wooden spoon and some elbow grease!

Once the mixture is combined, add a few dark chocolate chips and form into ball shapes before placing on a baking tray. Bake for twenty minutes on gas mark 6 and you’ll have a super sweet but nutritious breakfast or afternoon snack that will keep in the fridge for up to three days.
